The goal is to ultimately earn more Stars than your opponents, either by winning them, being awarded with them as bonuses for how you play or by simply purchasing them with the Coins you earn throughout the course of the game.

The main idea of the Mario Party series is that the Mushroom Kingdom gang of Mario, Luigi and all of their friends are participating in a giant, interactive board game.
